Yorkshire Pecorino Fiore
This is the oldest cheese in this range, and one of the award winners. Yorkshire Pecorino Fiore is not rushed, they allow the ageing process to take between 6 and 8 months to complete. As a result of this ageing process the cheese has a mild picante flavour producing slightly nutty notes.
Yorkshire Pecorino Fresco
A young cheese from this range. Through the reduced aging process, this cheese is creamy soft with a yoghurt flavour. They allow the Yorkshire Pecorino Fresco to mature for 30 days using pasteurized local ewes milk and animal rennet.
The Home Farmer
Old Roan
Made using raw milk to a slow traditional recipe, resulting in a cheese that is smooth and creamy in texture. This means that, not only is it an incredible addition to your cheeseboard, it also melts nicely so you can cook with it too. They use unpasteurised milk to give it added flavour. The milk travels a mere 5 metres from the milking parlour to the processing room next door! The cheese is clothbound and aged in the maturing room for 3-4 months.
